Today I’m collecting all of my many cheesecake recipes into one comprehensive guide. You’ll see everything from cheesecake brownies and cheesecake stuffed cake to the absolute best cheesecake on the internet.
I’m even sharing my top tips on how to achieve perfectly creamy, smooth results WITHOUT a water bath, every single time. You are going to want to bookmark this one!
Before we begin, I want to highlight the recipe that started it all: my best cheesecake recipe. It’s a classic, creamy cheesecake that serves as the base of most all of the cheesecake recipes I’m sharing here today.

SO many of you have tried and loved this recipe over the years, and for good reason! It’s cheesecake perfection; restaurant-quality results with an amazing texture and flavor.
This recipe, and ALL of my cheesecake recipes, can and should be made without a water bath (yay!). Scroll down to the bottom of this post for my tips for making a perfectly crack-free cheesecake without a water bath!
1. The Best Cheesecake Recipe
The classic! This is a great place to start if you’ve never made cheesecake before or want to experiment with different toppings (we love caramel sauce and blueberry sauce!).

2. Lemon Cheesecake
One of my most requested cheesecake recipes! My version has a distinct lemon flavor and is oh-so pretty.

3. Oreo Cheesecake
Served on an Oreo crust and with crumbled Oreo cookies throughout the batter. I include plenty of tips to make sure you don’t end up with a soggy crust (took a long time to perfect this!). One of my all-time favorites.

4. Cheesecake Stuffed Strawberries
Perfect for parties! These are fast to whip up and are always a hit.

5. Blueberry Cheesecake
We’ll toss blueberries into the batter and make a blueberry topping for one. Yum!

6. New York Cheesecake
Rich and creamy New York cheesecake is a bit different from the norm, in the best way. This recipe was handed down to me from my grandmother and that sour cream topping is my favorite.

7. Cheesecake Bars
I have LOTS of flavor variations for these besides this classic version, including pumpkin cheesecake bars, chocolate cheesecake bars, funfetti cheesecake bars, Oreo cheesecake bars, and monster cheesecake bars.

8. Strawberry Cheesecake
You can’t get more traditional than a creamy cheesecake with a fresh strawberry topping.

9. Cheesecake Stuffed Cake
A decadent monstrosity. One of my favorite cheesecake recipes! Besides this version, I also have a carrot cake cheesecake and an Oreo cheesecake stuffed cake!

10. No-Bake Cheesecake
This no-bake cheesecake tastes just like classic cheesecake! We love it all the time, but especially during the summer months. I also have a no-bake chocolate cheesecake!

11. Turtle Cheesecake
Similar to turtle candies, this cheesecake has plenty of caramel, chocolate, and pecans.

12. Cheesecake Brownies
The brownie layer is thick, fudgy and dense and the creamy topping is the perfect balance. I also have raspberry cheesecake brownies and dulce de leche cheesecake brownies.

13. Raspberry Cheesecake
This recipe swirls fresh raspberry sauce into creamy cheesecake. If you love this, you should try my raspberry cheesecake dessert pizza too!

14. Cheesecake Stuffed Chocolate Chip Cookies
This is one of many cheesecake cookie recipes, including my strawberry cheesecake cookies, Oreo cheesecake cookies, and pumpkin cheesecake cookies.

15. Peppermint Bark Cheesecake
Perfect for the holidays! This peppermint bark cheesecake will be the star of your dessert table.

We love serving these mini cheesecakes at parties. You can use a variety of toppings (chocolate ganache and whipped cream are my favorite) so everybody is happy!

18. Peanut Butter Cheesecake
Chocolate and peanut butter come together beautifully in this peanut butter cheesecake. This is similar to my peanut butter pie, if you’ve tried that recipe!

19. Salted Caramel Cheesecake
Swirled with salted caramel sauce and topped with even more, this salted caramel cheesecake recipe is incredibly decadent.

20. Key Lime Cheesecake
If you love key lime pie, you should try this key lime cheesecake. It’s so refreshing and, thanks to my special technique, absolutely loaded with true fresh key lime flavor!

21. Pumpkin Cheesecake
This is one of my favorite fall cheesecake recipes! I also have a pumpkin cheesecake pie that’s like a combination of pumpkin pie and cheesecake.

22. Apple Pie Cheesecake
If apple pie is your favorite pie, you are going to absolutely love this cheesecake!

23. Basque Cheesecake
Yes, it’s supposed to look that way! This burnt cheesecake is a carefully developed tribute to the famous San Sebastian version and reminds me of créme brûlée.

Cheesecake Tips
- Take care with the crust. When using a springform pan, press your crust as high up the sides of the pan as possible! This allows the cheesecake to shrink away from the pan as it cools. If you aren’t able to get your crust high enough and have some cheesecake sticking the edge of the pan, just make sure to run a knife between the pan and the edge of the cheesecake to loosen it.
- Use room temperature ingredients. This is important for so many recipes, but especially cheesecake. Using room temperature ingredients makes for the easiest and most thorough combining, which is critical to a smooth texture.
- Go easy with the eggs. Add the eggs slowly and be gentle with the batter once you add them. If you incorporate too much air into the batter, your cheesecake will puff up in the oven and then sink (and crack) as it cools.
- Be patient. Don’t open the oven while your cheesecake bakes. The change in temperature could cause the cheesecake to crack.
- Cool slowly. I recommend either turning off your oven and cracking the door or removing your cheesecake and placing it on your stove until it reaches room temperature. Then you can transfer it to the fridge to cool completely.

Hi, have you ever tried a mincemeat cheesecake? I had a taste of one at a Christmas party and have been looking for a recipe ever since. I did think of using a jar of mincemeat, don’t know if this would work, any suggestions? Thanks, Carol
