If I had to pick a current favorite from this list, it would be my pumpkin coffee cake cookies (#1 on my list below!). Not only is this one of my newest fall cookie recipes, it’s also tasty enough to convert a non-pumpkin lover (me!) into a huge fan! The cookies are super soft (thanks to the pumpkin) and have enough streusel to satisfy the most streusel-obsessed eaters (also me!). They fully live up to their name, with all the charm of pumpkin coffee cake, but in the cutest cookie form. I highly recommend them!
