30+ No Chill Cookies
There are few feelings worse than getting halfway through a cookie recipe only to realize the dough needs to chill for an hour (or several!) before baking. Frustrating, right? Fortunately, I’ve developed quite a few no chill cookie recipes that will satisfy your craving (or your last-minute party contribution–oops!) fast.
We’ll start off this list with my favorite no chill Christmas cookies. The Christmas baking season can be hectic to say the least, and I have the most appreciation for no chill cookies when I’m in the trenches of making not-so-timely recipes like gingerbread men cookies or chocolate crinkle cookies.

If I had to pick a favorite from this whole list, it would have to be my no chill sugar cookies. I mean really, a no chill cutout cookie!? It feels outrageous to be able to roll and cut out cookies right away without needing to chill the dough first, and yet, it works! Only if you use my recipe though 😉

Yes, and I will never endorse skipping the chilling step in a recipe that calls for it.
As a recipe developer, I know firsthand the importance and sometimes necessity of chilling cookie dough. It allows flavors to develop, helps cookies maintain their shape in the oven, and encourages a soft texture.
However, sometimes you simply *don’t* have time for that, but you still need amazing cookies. That’s where this collection comes in handy; I carefully designed today’s recipes to be full of flavor and beautiful textures without even a minute of fridge time. Ta da! 🪄
If your recipe calls for chilling and you skip it, you could end up with an unmanageable dough, cookies that spread too much or are crispy, or even bland cookies.
You must use a specific no chill cookie recipe if you don’t have time to chill your cookie dough; otherwise you will run into issues. I always recommend following the recipe!
