    Caramelized Onions

    A detailed guide on how to (easily!) make caramelized onions at home. This is a step-by-step guide for this truly simple technique that can elevate any dish!

    The Sweet Magic of Caramelized Onions: A Step-by-Step Guide

    Today weโ€™re diving into the alchemy of transforming the humble, sharp-tasting onion into the gilded, caramelized version of itself. While the process of preparing caramelized onions may seem complicated, itโ€™s actually quite simple and requires little more than onions, a good pan, a dab of fat, and, to be honest, the patience of a saint.

    On that note, I want to be up front with you before we begin. Caramelizing onions is not a complex process, but neither is it a quick one! Donโ€™t plan on whipping them up as a last-minute addition to a hectic weeknight dinner, or anything to be started when youโ€™re feeling crunched for time.

    This is culinary patience in action, and the reward is well worth the wait (as you surely know if youโ€™ve ever tasted my French onion soup!).

    What You Need

    The only ingredients strictly necessary to caramelize onions are onions and a bit of fat (butter or oil, your choice!) to cook them in and keep them from sticking from the pan. However, I do include a few other ingredients for best taste and best results.

    Ingredients for caramelizing onions
    • Onions. Yellow onions or sweet onions are my preference when caramelizing onions. Youโ€™ll need to slice them thinly and uniformly so that they cook evenly.
    • Butter or oil. Either works well, but I prefer butter for its flavor. This will coat the onion slices and keep them from sticking to the pan.
    • Salt. While not strictly necessary, this adds flavor to the caramelized onions.
    • Sugar. Purists will not be happy at me for this recommendation, but I stand by it. A pinch of sugar not only adds to the depth of flavor, but it encourages the caramelization process along, too. With how long this process can be, Iโ€™ll take all the encouragement I can get ๐Ÿ˜‰
    • Liquid. Water, chicken broth, vegetable broth, or a dry white wine will work well here, with the latter obviously yielding more flavor to the end result. Youโ€™ll cook the onions on a lower heat which will help keep the onions from sticking, but if you notice the onions sticking or burning to the bottom of the pan, add a splash of liquid to deglaze the pan.
    • Patience. As I mentioned, this isnโ€™t a quick process, so make sure you allot yourself at least an hour for proper caramelization.

    SAMโ€™S TIP: You can caramelize as many onions as your pan can accomodate, but note that they will shrink in size considerably. I find that 2.5-3 lbs of onions will yield me about a cup of caramelized onions.

    How to Caramelize Onions

    1. Prepare the onions. Cut them pole to pole, cut off the ends, and remove the papery outer layer. Cut the onions into thin slices, about โ…›โ€ณ thin.
    2. Melt your butter (or heat your oil). Once the pan is hot, add your onions and toss them until theyโ€™re coated with butter/oil.
    3. Once the onions begin to shrink in size, reduce the heat to medium-low and continue to cook, stirring frequently, until they are golden brown and caramelized. This will take some time! Expect 45-60 minutes.

    Frequently Asked Questions

    Which variety of onions is best for making caramelized onions?

    Technically you can caramelize any onion youโ€™d like (even shallots). However, I personally recommend using either yellow onions or Vidalia or Walla Walla onions (which are sweet onions that yield sweeter results). Red or white onions donโ€™t develop flavor as nicely as the other varieties and so I donโ€™t recommend them.

    Why are my onions burning?

    When cooked properly, the onions should never burn. The goal is to first sweat them over a medium heat, then to slowly cook them over a lower heat. This allows the natural sugars to be released, which in turn allow the onions to caramelize. If the heat is too high or the onions arenโ€™t stirred enough, the sugars will burn. Patience is key here.

    What is the best pan for caramelizing onions?

    Use a wide, heavy-bottomed pan. A Dutch oven would also work well. Avoid non-stick, as you actually need a degree of sticking to occur in order to get the proper caramelization.

    What can I do with caramelized onions?

    • Use them as a base for French onion soup or French onion chicken.
    • Toss them into your favorite pasta dish.
    • Use for burgers or sandwiches (theyโ€™re excellent on smash burgers or melted into the cheese of a gourmet grilled cheese).
    • Mix into scrambled eggs, serve over an omelet, or stir into the custard filling of a quiche Lorraine.
    • Use as a pizza topping โ€” I love them chopped and sprinkled over my sourdough pizza.
    • Stir into risotto, the sweetness complements creamy risotto beautifully.
    • Serve over or alongside steak and mashed potatoes.

    Ingredients

    • 1-3 lbs (454-1360 g) onions
    • 2 Tablespoons butter or olive oil
    • 1 teaspoon table salt
    • 1 teaspoon granulated sugar optional
    • ยฝ cup water, dry white wine, or chicken broth as needed

    • Large skillet

    Instructions

    • Slice the onions. Cut onions in half, root to stem. Remove the outer, papery skin. Cut onions with the grain into thin (about โ…›") slices.
      1-3 lbs (454-1360 g) onions
    • Add the butter or oil to a large skillet or Dutch oven. Turn stovetop heat to medium.
      2 Tablespoons butter or olive oil
    • Once butter is melted or oil is shimmering, add onions, salt and sugar (if using).
      1 teaspoon table salt, 1 teaspoon granulated sugar
    • Cook, stirring occasionally (every few minutes), until onions begin to shrink and have reduced in volume some.
    • Once onions are softened and reduced in volume, reduce heat to medium-low and continue to cook, stirring occasionally/as needed, until onions are deep golden brown in color and caramelized. If the onions begin to stick or burn to the pan, simply deglaze with a splash of broth, water, or wine.
      ยฝ cup water, dry white wine, or chicken broth
    • Use as desired.

    The onions will shrink considerably as they cook. I find I need 2.5-3 lbs of onions for 1 cup of caramelized onions.

    Storing

    Store in an airtight container in the refrigerator for up to a week. They may also be frozen for several months.
