Funfetti Oreo Bars

Soft and chewy funfetti Oreo bars taste like a party in cookie bar form! They have a buttery cake batter flavor and are jam-packed with colorful sprinkles, Oreo cookies, and chocolate chips. No mixer required and just 15 minutes to prep!

1 cup (226 g) unsalted butter melted and cooled until no longer warm to the touch
2 cups (400 g) granulated sugar
2 large eggs room temperature preferred
1 ½ teaspoons vanilla extract
2 Tablespoons (30 ml) milk
2 ¾ cups (345 g) all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
16 chocolate sandwich cookies broken into pieces
⅓ cup (60 g) mini semi-sweet chocolate chips
¼ cup (42 g) white chocolate chips
¼ cup (52 g) sprinkles

Instructions

Preheat oven to 350F (177C) and line a 13x9” metal pan (see note) with parchment paper, or lightly grease and flour the pan. Set aside.
In a large mixing bowl, stir together melted (cooled) butter and sugar until combined.

Add eggs, vanilla extract, and milk and stir well.

In a separate, medium-sized mixing bowl, whisk together flour, baking powder, and salt.

Gradually add dry ingredients to wet, stirring after each addition until completely combined.
Add cookie pieces, chocolate chips, and sprinkles and stir well.
16 chocolate sandwich cookies, ⅓ cup mini semi-sweet chocolate chips, ¼ cup white chocolate chips, ¼ cup sprinkles
Spread batter evenly into the prepared pan and bake in preheated 350F (177C) oven for 32-35 minutes. When finished baking, the edges will just begin to turn a light golden brown and a toothpick inserted into the center should come out clean or with a few moist crumbs.
Allow to cool in pan before cutting and serving.

Baking time indicated is for a metal baking pan. Note that glass pans will often take longer to bake.

Storing

Store in an airtight container at room temperature for up to 5 days.
