Sauteed Cauliflower

Ingredients

  • 4 tsp Extra Virgin Olive Oil divided
  • 1 head of cauliflower
  • 1/2 white onion diced
  • 2 cups diced tomatoes
  • 3 cloves garlic minced
  • 2 Tbsp Balsamic vinegar
  • 1/4 cup water
  • 1 tsp black pepper
  • 3/4 tsp Kosher salt
  • 1/4 tsp Chili Powder

Instructions

  • Break or cut cauliflower into small florets.
  • Heat 2 tsp of Olive Oil over medium heat.
  • Add onions and cauliflower.  Cover and cook about 10 minutes or until cauliflower is tender, stirring occasionally.  If pan becomes too dry, add water, 1-2 Tbsp at a time.
  • Add in remaining ingredients:  Remaining 2 tsp olive oil, Tomatoes, garlic, Balsamic vinegar, pepper, salt, and chili powder, and stir well.
  • Cook uncovered about 3 minutes, stirring occasionally.
