seeded and diced (I used a yellow and orange and half a red one because that was all I had on hand)

Instructions
Soak Quinoa 5 minutes.
Rinse, drain into colander
Drain beans into colander and rinse well
Heat olive oil over medium heat
Add onion, jalapeno, garlic, and celery, cook about 5 minutes
Add peppers, cook another 5 minutes
Add all spices & herbs, stir for 2 minutes and ensure contents of pan are evenly covered
Add beans, water, molasses, tomato sauce, tomato, and quinoa
Bring to a boil, cover, reduce heat to simmer & cook about 20 minutes or until quinoa is cooked
Stir in soy sauce & pepper
