Quinoa Chili

Ingredients

  • 1 1/2 cups dry Quinoa
  • 1 can Black Beans 15 oz
  • 1 can Dark Red Kidney Beans 15 oz
  • 1 Tbsp olive oil
  • 1/2 onion chopped
  • 1 medium-sized jalapeno seeded & minced
  • 2 bell peppers seeded and diced (I used a yellow and orange and half a red one because that was all I had on hand)
  • 4 cloves garlic minced
  • 1 diced celery stalk
  • 1 cup unsalted tomato sauce
  • 1 medium tomato diced
  • 1 1/2 tsp cumin powder
  • 1 1/2 tsp paprika
  • 1 1/4 tsp chili powder
  • 1 tsp ground basil leaf
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp crushed red pepper
  • 1 Tbsp molasses
  • 1 bay leaf
  • 1/4 tsp dill weed
  • 1/4 tsp tarragon
  • 1/2 tsp parsley flakes
  • 3 cups water
  • 1 Tbsp soy sauce
  • Ground pepper

Instructions

  • Soak Quinoa 5 minutes.
  • Rinse, drain into colander
  • Drain beans into colander and rinse well
  • Heat olive oil over medium heat
  • Add onion, jalapeno, garlic, and celery, cook about 5 minutes
  • Add peppers, cook another 5 minutes
  • Add all spices & herbs, stir for 2 minutes and ensure contents of pan are evenly covered
  • Add beans, water, molasses, tomato sauce, tomato, and quinoa
  • Bring to a boil, cover, reduce heat to simmer & cook about 20 minutes or until quinoa is cooked
  • Stir in soy sauce & pepper
  • Enjoy!
