This classic and easy potato salad recipe is perfect for summer parties and picnics! My recipe includes add-ins like sweet pickles, smoked paprika, and hard boiled eggs for extra flavor. Recipe includes a how-to video!
Place potatoes in a large pot and cover with water. Bring to a boil and cook until tender when pierced with a fork. Drain and allow potatoes to cool completely.
2 lbs potatoes cut into bite-sized pieces¹
Once potatoes have cooled, combine cooked potatoes, eggs, onion, sweet pickles, celery, and bacon in a large bowl. Set aside.
3 hard-boiled eggs, ½ cup finely chopped red onion, ½ cup diced sweet pickles, 1-2 stalks celery, ½ cup crumbled bacon²
Prepare dressing by whisking together mayonnaise, sweet pickle juice, sugar, mustard, salt, pepper, and smoked paprika until well-combined.
Pour dressing over ingredients in large bowl and toss until all ingredients are well coated by dressing.
Cover and refrigerate for at least an hour before serving.

¹Golden potatoes or Fingerling potatoes are my preference when making potato salad. If using these varieties I often do not peel the potatoes, but you can if you’d like!²You can use store-bought crumbled bacon (make sure it is “real” bacon and not “bacon-flavored”, this is usually sold near the salad dressings). If using freshly cooked bacon, this will be about 5-6 strips.³For a less-sweet potato salad, you may substitute vinegar instead
